Homemade Pumpkin Bars with Candied Pecan Topping
There is no secret that I love fall and winter, and it’s no secret that one of the reason for this is pumpkin. I LOVE pumpkin and most things made with pumpkin! I know that many have pumpkin pie at Thanksgiving and move away from pumpkin at Christmas; however, I grew up with pumpkin for both holidays. Ready for a new pumpkin recipe? Ingredients:
Homemade Pumpkin Bars ingredients
- 15 oz. can of Pumpkin Puree
- 1 ½ C Brown Sugar
- 3/4 C Vegetable Oil
- 4 Eggs
- 2 C Flour
- 2 tsp Baking Soda
- 1 1/2 tsp Cinnamon
- 1 ½ tsp Kosher Salt
Candied Pecan Ingredients
- 1/2 lb Pecans
- 1 egg white
- 1/2 Tbsp water
- 1/2 C Sugar
- 1/2 Tbsp Cinnamon
Directions:
- Combine pumpkin, brown sugar, oil, and eggs in a large mixing bowl.
- Gradually add in dry ingredients.
- Pour into two greased 8×8 pans. Bake for 35 minutes.
- Ahead of time, or after cake comes out of oven and is cooling, make your candied pecans. Combine egg white, water and cinnamon. Add in pecans and sugar. Bake for 1 hour at 250 degrees, stirring every 15 minutes. Add as topping to pumpkin squares.
Doesn’t that look yummy? I can’t wait to make this for Christmas this year! I like to make things ahead for the holidays, so I don’t have as much work to do on the actual holiday. I’ll be making the bars and candied pecans the day before, but I’ll keep them separate from each other until I am ready to serve it.
