Lemon Strawberry Shortcake Trifle

Strawberry season is in full swing, so I thought a delicious Strawberry shortcake was in order.  However, I wanted to bring you something a little different than the usual.  I wanted a light, springtime flavor, especially since I was looking for a new light dessert to serve at Easter.  Lemon pairs deliciously with strawberries, so I thought it might lighten and freshen up an old favorite.  I came up with this Lemon Strawberry Shortcake Trifle that can be easily altered to make a sweet Easter breakfast treat or just sweeten it up a bit more for a great Easter dessert idea.  

For each breakfast trifle you will need:

  • 1 cup plain yogurt
  • 2 tsp. honey
  • 2 tsp. lemon juice
  • ½ cup strawberries
  • 2 tsp. granulated sugar
  • 1 biscuit 
  • 1 lemon Peep for decoration

For each dessert trifle you will need:

  • 1 cup whipped cream
  • 2 tsp. lemon juice
  • ½ cup strawberries
  • 2 tsp. granulated sugar
  • 1 slice angel food cake
  • 1 lemon Peep for decoration

Start by washing your strawberries, remove the tops, slice, and sprinkle them with sugar.  Then, set them aside and allow them to soften and break down. 

Then, for the breakfast version, combine  honey, lemon juice, and yogurt in a bowl and mix well.  For the dessert version, mix the lemon juice and honey with Cool whip.  Break biscuit (breakfast) or cake (dessert)  up into small pieces.

Begin layering your trifle:

I start with a dollop of yogurt (breakfast) or whipped cream (dessert).

Add some biscuit (breakfast) or cake (dessert).  Then, add another layer of yogurt (breakfast) or whipped cream (dessert).

Pile on some strawberries.  Repeat the layers until your dish is full.

Top with a lemon Peep for a fun decoration.

Doesn’t that look like a yummy Easter treat?  Of course, this would make a great springtime treat anytime with the Peep left off.  Make a larger version to take for a church dinner or ladies group!
