Andes Mint Brownies
My son loves Andes chocolates. When we go to Olive Garden, he eats his Andes and then starts looking for mine. What a great thing to add to a batch of brownies! Ready to make your own Andes Mint Brownies?
Ingredients:
- ½ C. butter, softened to room temperature
- 2 eggs
- 1/3 C. cocoa powder
- ½ tsp. baking powder
- 1 C. sugar
- 1 tsp vanilla
- ½ C. flour
- 1 package of Andes Mint Chocolate Baking Bits (located in the baking section with the chocolate chips)
Directions:
Preheat the oven to 350 degrees and spray an 8×8 baking dish with non-stick cooking spray. Start by combining the butter, eggs, cocoa powder, sugar, and vanilla. Then, slowly add in the flour and baking powder to the chocolate mixture. Lastly, add about ¾ of the Andes Baking Chips and mix into the batter. Reserve the last ¼ of the bag for sprinkling on top of the brownies prior to baking.
Pour the brownie batter into the baking dish and evenly spread the better out in the pan. Sprinkle the rest of the Andes Baking Bits onto the top of the brownie batter.
Bake 25-30 minutes. Do not over bake. These brownies are best a little fudgey. Once cooled, cut evenly into squares. This recipe makes approximately 24 brownies. 1 brownie equals 1 serving.
