Garlic and Herb Potatoes
I truly LOVE potatoes as a side dish from mashed to baked and breakfast to dinner. I could eat potatoes every meal if I could, but I get burned out on plain old mashed potatoes and am always looking for a way to prepare them that brings tons of flavor to the table. This is one of my hands down favorite ways to enoy them. It takes two pots. I know it may be a pain for a simple side dish, but it’s totally worth it. Plus, that’s when you make sure the dishwasher (or teenager) takes care of the dishes. You could just sauté them, but before they are cooked through they are burnt. If you just boil and add seasonings, you don’t get the deliciously crunchy edges and pan fried flavor. So, even though its an extra dirty dish, try it this way. You won’t regret it.
Dice potatoes into small bite sized pieces. For medium potatoes, I cut into eighths, or small creamers can be quartered.
Boil in a large pot of water for 10 minutes, and then, drain very well.
Melt butter in a large saucepan over medium heat.
Add potatoes, rosemary, basil, oregano, and garlic, and sauté until potatoes soften and edges are crisp and brown. Stir occasionally. Sprinkle with fresh or dried herbs before serving if desired to kick up the flavor. You can also add a dash of parmesan cheese to the top to really indulge.
